Cookie Crumbles – Blueberry and Vanilla Muffins

A little before Christmas, I finished up at my job, ready to start at a new place a few days later. Now to be totally honest with you, I hadn’t worked there very long (around 2 months) before I handed my notice in so I wasn’t really expecting much in the way of leaving presents.

How wrong was I?! The lovely people in my team had clubbed together to buy me a delish cake (M&S finest, thank you very much), some beers and a pub quiz book (see you at the Stew and Oyster on a Tuesday night!) They also knew about my love of baking and paid for a three month subscription to Cookie Crumbles, a recipe mix company.

Now, I’ll level with you, the thing I love most about baking is taking a bunch of ingredients and turning those into something delicious. Whether that’s on my own terms or by following a recipe so I was a little unsure what to expect when it came to a pre-made mix.

The first month I got a chocolate brownie mix which made a really nice dense bake, I think if I made it again I would add some toppings to give additional oomph to the brownie.

The second month I received the blueberry and vanilla muffin mix:

The first thing that struck me was that there were actual blueberries in the mix (!) which I wasn’t expecting at all.

Rather handily, I only needed some oil, some water and one egg. Luckily one egg was all we had left in the box when I decided to whip up these muffins.

The mix came together really easily (and I got to try out my new mixing bowl) and made seven small butterfly-cake sized portions.

After 10 or so minutes in the oven, the muffins were ready.

They tasted pretty nice, especially when they were still warm. I think they would be good with some clotted cream in the style of an afternoon tea.

My only criticism is that there wasn’t enough mix to make decent-sized muffins. Ideally I would have wanted more but then again who doesn’t when it comes to sweet treats?

There are other mixes available on the Cook Crumbles website, including gluten free brownies, cookies and gingerbread (which I’ll be trying out next)!
